In Frisange (south of Luxembourg), the summer honey is harvested at the edge of a forest, bordered by a long alley of old linden trees. Thanks to the proximity of private gardens, one can also find notes of lavender and other aromatic herbs.
The 2022 harvest is dominated by blackberry, linden tree and lavender flowers. Slightly tangy in taste. This years summer honey also contains sunflower nectar, which will contribute to a rapid crystallisation. In order to restore the « runny » texture you can heat the (closed) honey jar in a water bath at 40°C maximum.
