Our apiary is located on the top of a mountain in the Hautes-Vosges where the environment is still very unspoiled and rich. In order to increase the diversity in taste of our honeys, we carried out several small harvests.
The 2022 harvest, at the end of spring, consists mainly of holly and maple flowers, with subtle honeydew notes. There is a mixture of almond and caramel aromas, its intense taste remains long in the mouth. A honey with a rare flavour that leaves no one indifferent!
The presence of mountain spring flowers this year accelerates the crystallisation process. If you want to restore a « runny » texture you can heat the jar in a water bath at max 40°C.
